SOUR CREAM SUBSTITUTE

1 c yogurt
2 tsp flour
Bring yogurt to room temperature. Stabilize with 2 teaspoons flour to 1 cup yogurt before stirring into a hot dish at the end of cooking time.

BISCUIT & PANCAKE MIX: "MASTER MIX"
("Eating Well for Less," WA State DSHS, pg. 21)

8 cups all purpose flour*
1-1/3 cups nonfat dry milk
¼ cup baking powder
1 tsp salt
1-1/2 cups vegetable shortening or margarine **
Stir dry ingredients together until well mixed. Cut in vegetable shortening or lard until well mixed. Put in closed, covered jar or can. Store mix in the refrigerator if margarine is used or if mix will be kept longer than one month. (Refrigeration prevents mix from going rancid.) It is OK to store mix at room temperature when vegetable shortening is used, but use mix within one month. Stir mix lightly before using in recipes.
* Enriched cornmeal or rolled oats can also be substituted for 1-2 cups of flour.
** To use oil instead of shortening, mix dry ingredients together. Omit shortening or margarine. Add oil when mixing recipes. Add 2 tablespoons oil for every cup of Master Mix in the recipe.
Master Mix Baking Tips:
Preheat oven 5-10 minutes before baking.
A hot oven makes biscuits turn out the best.
Reduce heat by 25 degrees F if you use a glass pan.
Save electric or gas bill. Turn oven off when through baking.

PANCAKES (using the Master Mix):

2 cups Master Mix
1 cup water
2 eggs, beaten
Put all the ingredients in a bowl. Stir just enough to moisten dry ingredients. Drop by teaspoons onto a hot, greased skillet. (A skillet is hot when water dances on it.) Cook slowly until the surface is covered with bubbles. Turn and cook until second side is well browned. Makes about 12 medium sized pancakes.

SESAME MARINADE

2 tbsp sesame oil
¼ cup soy sauce
5 tsp rice wine vinegar
1-1/2 tbsp sugar
½ tsp red pepper flakes
2 tbsp chopped cilantro
2 tbsp chopped green onion
Combine all of the ingredients in a bowl. Stir until the sugar is dissolved. Example: Add to cubed tofu. Marinate for several hours. Stir-fry with vegetables and serve over rice or pasta.

SCRUMPTIOUS SCOTTIE SCONES (for DOGS only !!)

2 cups white flour
2 tsp baking powder
1 tbsp honey
¼ cup vegetable oil
1 egg
½ cup skimmed milk
1 clove garlic, minced
Preheat oven to 350 degrees. Combine flour, baking powder and honey in a bowl. Add oil, egg, milk, and garlic, then stir until mixed thoroughly. Turn out dough onto lightly floured surface and knead. Roll out to ½ inch thick, cut into 2" square and place on a greased baking sheet.
Bake for 15 minutes. Cool on a rack , then serve. Store in an airtight container.

LIQUID SIMMERING POTPOURRI

1 qt pineapple juice
1 qt water
1 qt apple cider
4 pieces ginger root
3 cinnamon sticks
16 whole cloves
1 tsp allspice
2 tsp pickling spice
Simmer in a large pot on the stove. This is not for human consumption.
